What you need to know

The main process that interests tourists is the fermentation of the sauce in giant wooden barrels. They are made of loi wood, bound with sturdy metal straps, and covered with a thick layer of salt. Each barrel holds 14–15 tons of fresh fish. The fermentation process lasts from 8–9 up to 12 months.

Phu Quoc fish sauce consists solely of anchovies, salt, and water, with no preservatives or artificial additives. At the factories, you can taste the product and purchase it to take home.

Main factories to visit:

  • Khai Hoan: No. 11 Hung Vuong Bridge, Duong Dong town. The most famous factory, operating since 1975.
  • Nam Ngu: The largest factory on the island (over 22,000 sq. m).
  • Phung Hung: Located on Nguyen Van Cu Street, An Thoi town.
  • Hung Thinh: 30/4 Street, Quarter 1, Duong Dong town.
